Grain and milled rice quality, cooking properties. Grain of medium size, 1000
grain weight — 28–29 g. Grain is of prolonged form, spindle shaped, length-to-beam
ratio (
l/b ) — 3.0. Milled rice is white, non-glassy. Milling yield 68–69 %. When cooked
turns into sticky mass, which has a taste not typical for rice. Therefore, Vita should be
used for cooking dietary and clinical nutrition.
New variety Vita belongs to so-called glutinous varieties. Its grain contains am-
ylopectin in starch and less than 5 % of amylose (average varieties have from 8 to
37 % of amylose). Glutinous rice is intended for the production of special products of
medical and infant nutrition. They are particularly necessary for bottle-fed children in
the first years of life.
